Healthified Chocolate Chip Cookies By Michelle Schwarzmann

The holidays are around the corner, a time when most of us overindulge in sugary cakes, cookies, and holiday treats. Why not make a great tasting treat without all of the extra sugar? Your kids won’t know the difference.

 

 

Healthified Chocolate Chip Cookies

1 1/2 cups almond meal/flour

1 tsp baking soda

1 pinch of sea salt

2 eggs

4 dates (soaked in water for 10 minutes to soften)

1 tsp vanilla extract

3 tbsp coconut oil or organic butter

1 tbsp unsweetened almond, hemp, or flax milk

1/2 cup dark chocolate chips

1/4 tsp organic apple cider vinegar (optional-makes them rise vs. flat)

Preheat oven to 325 degrees. Prepare a silicone lined or parchment paper lined cookie sheet.

Combine almond meal, baking soda and salt in a medium sized mixing bowl.

In a high powered blender or Vitamix, blend eggs, dates, vanilla, coconut oil or butter, and nut or seed milk until smooth. Add the mixture to the almond meal mixture and stir until well combined. Fold in chocolate chips.  Spoon onto a cookie sheet and bake for 11-14 minutes, or until golden brown on top.

This recipe makes approximately 1 dozen cookies.
